Schaaf, a New Yorker, fell in love with flamenco music when he was a teenager listening to recordings of Sabicas and Carlos Montoya. He learned Triana, from Iberia, when he was a prize-winning piano student at The Juilliard School, studying with Rosina Lhévinne.

He then went on to a career as a chamber musician and an accompanist for such artists as Yo-Yo Ma, Jon Vickers, and Renata Tebaldi. Then, after a 25-year hiatus during which he made a substantial career as a photographer of musicians, he returned to the piano specifically to learn the entire Iberia, which he has loved for so many years.
